Bacon Wrapped Spicy Chicken Rollups

1 package of bacon

1 large onion, diced

2 jalapeños, diced

½ stick unsalted butter

3 large chicken breasts, sliced in half and pounded

16 oz cream cheese, softened

8 oz white cheddar cheese

1-2 tablespoons BBQ seasoning

2 tablespoons chives

Preheat a 10 inch skillet over medium heat. Sauté the onion and jalapeño in the unsalted butter.Cook over medium low heat until a nice light caramelized color forms.

Combine the cream cheese, sautéed veg, white cheddar, bbq seasoning, and chives in a bowl and mix until combined.

Spread a generous amount of the cream cheese mixture over the top chicken breast and roll the chicken breast as tight as possible.

Wrap each chicken roll up in bacon(about 2-3 strips) once wrapped, season with additional bbq rub.

Cook on a smoker or grill set up for indirect heat cooking at 250F. Once the chicken reaches an internal of 145F, paint each roll up with bbq sauce and continue to cook until the chicken reaches an internal of 163F, pull off the grill and let rest for 10 min.
