1 onion, diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon ground turmeric

1/2 teaspoon ground cinnamon

1 can (14.5 oz) diced tomatoes

1 cup red lentils, rinsed and picked over

4 cups vegetable broth

1 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons lemon juice

Fresh cilantro leaves (optional, for garnish)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook, stirring occasionally, for about 3 minutes, or until the onion is softened and translucent.

Toast the Spices: Add the ground cumin, ground coriander, ground turmeric, ground cinnamon, and cayenne pepper (if using) to the pot. Cook, stirring constantly, for about 1 minute, or until the spices are fragrant and toasted.

Add the Tomatoes: Stir in the diced tomatoes (with juice) and cook for an additional 2 minutes, stirring occasionally.

Combine the Ingredients: Add the rinsed red lentils, vegetable broth, salt, and black pepper to the pot. Stir well to combine and bring the mixture to a boil.

Simmer the Soup: Reduce the heat to low, cover the pot, and let the soup simmer for about 20-25 minutes, or until the lentils are tender and cooked through.

Blend the Soup: Using an immersion blender, blend the soup until it's smooth and creamy. If you don't have an immersion blender, you can carefully transfer the soup to a regular blender and blend it in batches.

Add the Lemon Juice: Stir the lemon juice into the soup, mixing well to combine. Taste the soup and adjust the seasoning with additional salt and pepper, if needed.

Garnish and Serve: Ladle the Red Lentil Soup with North African Spices into bowls and garnish with fresh cilantro leaves, if desired. Serve the soup hot and enjoy the comforting, aromatic goodness!
