Orange Broccoli Chicken

Chicken
1 1/2 lbs boneless skinless chicken thighs, cubed into small pieces (or chicken breast!)
2 tsp garlic powder
1 tsp ginger
1 tsp kosher salt
1 tsp pepper
1/2 cup arrowroot or tapioca or corn starch
2 tb avocado oil
Sauce
1/3 cup orange juice
1 orange, zested
2 tb toasted sesame oil
1/4 cup coconut aminos or low sodium soy sauce
1/3 cup honey
2 tb tomato paste
2 cloves garlic, mashed
2 tsp ginger
1/2 tsp kosher salt
1 tsp pepper
2 cups broccoli florets
2 cups cooked jasmine or basmati rice
Garnish:
2 green onions, sliced
1 tb sesame seeds
Cut chicken into small cubes and coat well in the seasoning and starch. Heat oil in a nonstick skillet (preferred) or cast iron skillet. Make sure the pan is very hot, then add the chicken. Let it cook undisturbed for about 5-6 minutes before tossing to the other side. Once chicken is almost cooked through, add the broccoli. Toss with the chicken then pour in 3/4 of the sauce, reserving some for later. Toss everything to coat well and reduce heat to low. Cook for another 5 minutes or so until the broccoli has softened and everything is cooked through. Last, plate the meal. Add cooked rice to bowls, with chicken on top. Drizzle remaining sauce on top, along with garnishes of sliced green onions and sesame seeds. ENJOY!
