Cheesy Garlic Butter Mushroom Stuffed Chicken

For the stuffing:
1 pound cremini mushrooms, finely chopped
2 cloves garlic, minced
1/4 cup butter
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley

For the chicken:
4 boneless, skinless chicken breasts
1/4 cup butter, melted
1/4 cup grated Parmesan cheese

Make the stuffing:In a large skillet, melt butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant.Add the chopped cremini mushrooms and cook for 10-15 minutes, or until softened and browned.Stir in Parmesan cheese, chopped parsley, salt, and pepper. Set aside to cool.
Prepare the chicken:Pound the chicken breasts to an even thickness if necessary.Cut a slit lengthwise in each chicken breast, creating a pocket.Fill the pockets with the mushroom stuffing. Secure the openings with toothpicks.
