4 boneless, skinless chicken breasts

Salt and pepper to taste

1 tosp olive oil (for grilling)

1 cup sliced mushrooms

1 cup shredded cheddar and Monterey Jack cheese blend

6-8 slices of cooked bacon (crumbled)

For the honey mustard sauce:

1/2 cup mayonnaise

1/4 cup Dijon mustard

1/4 cup honey

1 tbsp lemon juice

Chicken:

Make the honey mustard sauce: In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, and lemon juice. Set aside half of the sauce for serving, and use the other half for marinating the chicken.

Marinate the chicken: Season the chicken breasts with salt and pepper. Pour half of the honey mustard sauce over the chicken and let it marinate for at least 30 minutes (or up to 2 hours in the Sauté the mushrooms: In a skillet over medium heat, sauté the sliced mushrooms in a bit of olive oil until they are tender and browned. Set aside.

Grill the chicken: Preheat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade, discarding the excess marinade, and cook the chicken for 5-6 minutes per side, or until fully cooked or can put in oven at 400 for about 5-10 mins to cook chicken completely.

Add toppings: Place the cooked chicken on a baking sheet. Top each chicken breast with sautéed mushrooms, crumbled bacon, and a generous amount of the shredded cheese.

Melt the cheese: Place the baking sheet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Serve: Drizzle with the remaining honey mustard sauce and garnish with fresh parsley.

Pro Tip:

For extra flavor, add a sprinkle of smoked paprika or garlic powder to the honey mustard sauce.
