RHUBARB EMPRESS & TONIC
1½ oz Empress 1908 Indigo Gin
½ oz Rhubarb Syrup*
4 oz Tonic Water
Lime Wedge
Dash of Pink Peppercorns
Edible flower, to garnish
METHOD: Fill a glass with ice. Add rhubarb syrup and tonic water. Slowly pour Empress 1908 Indigo Gin into the glass, so it creates a layer over the cocktail. Top with lime juice and a sprinkle of pink peppercorns. If desired, garnish with rhubarb and an edible flower. Stir before enjoying!

To make the rhubarb syrup, cut 2 to 3 rhubarb stalks into 1/2 inch chunks. Combine rhubarb, ½ cup of sugar, ¾ cup of water and ½ teaspoon of vanilla extract in a small saucepan over medium heat. Bring to a boil. Reduce heat and simmer for 30 minutes, stirring occasionally. Remove from heat and cool. When cool, strain syrup into a jar and discard solids.
