Cucumber Chunks*

1-1/2 cups salt

4 quarts water

4 quarts of 1" sliced cucumbers

1 quart vinegar

2 cups sugar

5 cups vinegar

3 cups water

2 tablespoons pickling spices

3 cups sugar

1 teaspoon alum

步骤

Mix first 5 ingredients in crock

Let sit for 36 hours

Make sure pickles stay below liquid

Drain cucumbers

Pour 1 quart of vinegar over cucumbers

Add enough water to cover

Simmer 10 minutes; drain

Combine 2 cups sugar, 5 cup vinegar and water

Tie spices in cheesecloth

Simmer 10 minutes

Pour over cucumbers; cover; let stand 24 hours

Drain and reserve syrup

Add remaining sugar and alum

Heat to boiling

Pour over cucumbers and let stand 24 hours

Pack pickles into jars

Remove spices and heat syrup to boiling

Pour over pickles and seal

Makes 8 pints
