Strawberry and Basil are such a good combo together, but often, they exist suspended as solids in the cocktail. So, how do we make a more pleasant drinking experience?

I tried to freeze infuse thai basil in vodka, inspired by @handshake_bar prep for their caprese cocktail, and while it did taste like thai basil, it wasnt the bright basil flavor i expected. I won’t share the specs for this publically just yet but dm if you want a good starting point.

On the other hand, I learned that making strawberry water is fairly accessible, provided you have time and pectinex. Then, sugar, citric, and malic acids are added to make a clear strawberry cordial.

Combine the thai basil vodka with strawberry cordial, add a bit of basil eau de vie, and a spritz of absinthe, and you got a great tasty summer cocktail.

45 ml thai basil vodka

15 ml basil eau de vie @stgeorgespirits

40 ml strawberry cordial

2 spritz absinthe

Garnish : strawberry

Add vodka, basil eau de vie, and strawberry cordial to a mixing glass, then stir with ice until cold.Pour into rocks glass with a large piece of ice, spritz absinth, then garnish with half a strawberry.

Strawberry Cordial:

200 g strawberry

7 g pectinex

40 g sugar

1.2 g citric acid

6 g malic acid

Blend strawberry and pectinex together until the vessel reaches room temperature, then let it sit for an hour before straining through a coffee filter. once its filtered out, take 100 g of strawberry water and add sugar and acids. Stir to combine and reserve.
