2 lbs Russet potatoes (about 4 large), peeled and cut into ½-inch chunks

1 cup (240ml) good quality mayonnaise

3 Tablespoons yellow mustard

2 Tablespoons white vinegar

2 Tablespoons sweet relish

½ medium sweet onion, finely diced (about ½ cup)

1 celery stalk, finely diced (about ½ cup)

4 large hard-boiled eggs (2 chopped, 2 sliced for garnish)

Salt and freshly ground black pepper, to taste

Paprika, for garnish (optional)

Prepare the Potatoes: Place the peeled and chopped potatoes in a large pot. Cover them with cold water by about an inch. Add a generous pinch of salt to the water.Cook the Potatoes: Bring the water to a boil over medium-high heat. Reduce heat slightly and cook until the potatoes are fork-tender but still hold their shape (not mushy), about 10-12 minutes.Drain and Cool: Drain the potatoes thoroughly in a colander. For the best texture and flavor absorption, allow them to cool completely. You can spread them on a baking sheet or let them sit in the colander for at least 20-30 minutes, or even longer.Make the Dressing: While the potatoes cool, in a large mixing bowl, whisk together the mayonnaise, yellow mustard, white vinegar, and sweet relish until well combined and smooth.Combine Ingredients: Add the finely diced sweet onion, diced celery, and the 2 chopped hard-boiled eggs to the dressing mixture.Gently Fold In: Add the completely cooled potatoes to the bowl with the dressing and other ingredients. Gently fold everything together until the potatoes are evenly coated. Be careful not to mash the potatoes.Season: Season the potato salad generously with salt and freshly ground black pepper. Taste and adjust seasonings as needed.Garnish and Chill: Transfer the potato salad to a serving bowl.
