60 ml gin

20 ml lemon juice

15 ml simple syrup (1:1)

7 ml grenadine

2 orange twists

2 dashes absinthe (or glass rinse)*

shake/fine strain/coupe/orange twist

In the video, I rinse while chilling. This will contribute the faintest whisper of flavor and aroma, perfect for those who find absinthe overwhelming. For a more assertive absinthe character, rinse the glass after chilling—either with a quick swirl or an atomizer. It is also perfectly acceptable to simply add a small amount directly to the cocktail. In most cases, I find glass rinsing to be an overly-complicated affectation, but hey, that’s bartending.

Named after the practice of transplanting monkey testicle tissue into the scrotums of human men as an anti-aging therapy—a controversial practice developed by French surgeon (of Russian origin) Serge Voronoff. Apparently, it was all the rage in the 1920s and 1930s (if you could afford it). Yup. The original recipe calls for orange juice instead of lemon, which makes for a pretty flabby cocktail unless you’re using sour Seville oranges, which are not readily available in the United States, especially outside major cities. You could acidify sweet navel orange juice (Chapter VIII), but I’d only bother if you were making several. My preferred hack: regal shake with two orange twists—works just fine in a pinch.” -pg.48
