White Chocolate Peppermint Mocha Cookies

1/2 cup unsalted butter, room temperature

1 cup light brown sugar, packed

1 egg, room temperature

2 teaspoons vanilla extract.

1 teaspoon peppermint extract

1/3 cup Dutch processed cocoa powder

2 teaspoons espresso powder or instant coffee

1 cup all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

3 oz white chocolate

Crushed candy canes/peppermint candy for topping

Preheat your oven to 350°F. Line a baking sheet with parchment paper

In a stand mixer cream the butter and brown sugar together until the mixture becomes light and airy (about 2 minutes)

Add in the egg, vanilla and peppermint extract.

In another bowl, sift together the flour, cocoa powder, espresso powder, baking soda, and salt. Next, add the dry ingredients into the butter mixture, stirring until just combined.

Scoop 1½ inch spheres of dough onto a cookie sheet, leaving about 2 inches of space in between each ball of dough. Bake for 10-12 minutes. Allow to come to room temperature on a cooling rack.

Melt down white chocolate (30 second intervals in microwave) and drizzle over cooled cookies.

Crush candy canes with rolling pin or pulse in food processor and sprinkle over white chocolate drizzle.
