Chicken Bouillon Cubes

Let’s skip the artificial ingredients and fillers that are found in store bought bouillon and make a homemade version that’s packed with real flavor.

Once you try it, you won’t want to go back!

Plus you can make a large batch that will last you a long time.. just pop out a cube and you’re good to go.

How to make it:

2 tbsp avocado oil

3 chicken thighs

1 cup water

1 parsnip, chopped

2 carrots, chopped

1 leek, white part chopped

1/2 yellow onion, diced

3 garlic cloves

1/4 cup parsley, chopped

Juice from 1/2 lemon

2 tsp salt

1 tsp pepper

1/2 tbsp dry basil

1/2 tbsp dry oregano

1/2 tbsp dried rosemary

In a pot, add 1 tbsp of oil over medium heat and sear the chicken thighs for 3 minutes on each side. Season with salt and pepper. Turn heat to low, add 1 cup water and cover and simmer for 10 minutes

Remove chicken, and pour water into a bowl to reserve for later. Remove meat from the bone and set aside.

Return the heat to medium low and add another tbsp of oil. Add veggies and seasonings. Sauté for 8-10 minutes.

Reduce heat to low, then add the chicken and water back into the pot along with lemon juice. Cover for 20 minutes, stirring occasionally.

Use a high-speed blender or immersion blender until smooth.

Spoon the mixture into a mold that holds about 2 tbsp. Allow it to freeze solid, then store in a freezer-safe container.

Use it as you would regular chicken bouillon!
