Fake-out” Ep.2 Bacon & Egg Mcgriddles

This is my new series where I’ll be taking inspiration from your favourite and most nostalgic take out spots and recreating them into something much better and completely homemade.

For episode two you guys really came through and voted for McGriddles so here it is! I was actually really happy with how these turned out. All of the flavours of a McGriddle but entirely homemade. Doesn’t get much better than this. 🤤

Recipe; makes 3 sandwiches

6 eggs - cracked and whisked. Get a pan on medium heat and add two tablespoons butter. Let butter melt then add your eggs. Turn the heat down to low and allow your eggs to cook 3/4 flat. Then carefully fold your eggs and decide into three portions. Depending on the size of your donthis in batches.

9 strips bacon - cook bacon on a tray with oven rack at 375f for 10 minutes. Carefully brush bacon with maple syrup and put back in the oven to finish cooking. Approximately 10 minutes

1/4 cup maple syrup - for bacon and pancakes

3 slice cheddar cheese

1 teaspoon Salt

1 teaspoon black Pepper

Pancake batter;

Recipe

Dry;

1 cups flour

3 tablespoons sugar

1/2 tablespoon baking powder

1/2 teaspoon baking soda

1 pinch of salt

Wet;

1 cups buttermilk

1/2 stick melted butter unsalted

1 eggs

1/2 teaspoon vanilla extract (optional)

In a large bowl Slowly combine your dry and wet ingredients. In a large pan melt two tablespoons butter. Cook pancake batter in circular heat proof cookie cutters on medium to low heat. Once half cooked flip over. Allow to cool for another 2 minute before removing the cylinders. Remove pancakes from pan and bake for 3-4 more minutes at 350f to allow the pancakes to cool all the way through.
