Lemon Butter Chicken

FOR THE CHICKEN
2 boneless skinless chicken breasts thin cut
3/4 cup all purpose flour
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1 1/4 teaspoons salt
1/2 teaspoon pepper
3 eggs
2 tablespoon water
1/3 cup olive oil
FOR THE SAUCE
4 tablespoons butter
2 tablespoon minced garlic
2 cups chicken broth
4 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons chopped parsley
FOR THE CHICKEN

Slice the chicken breast in 4 thin pieces. Place each piece of chicken in between two pieces of plastic wrap. Pound with the flat end of a meat mallet to create thin cutlets.
Place the flour, paprika, garlic powder, salt and pepper in a bowl. Mix until combined. Set aside.
Place the eggs and water in a small bowl and whisk until smooth.
Dredge each chicken cutlet in the flour mixture, then dip in the egg.
Heat the olive oil in a large pan over medium high heat. Place the chicken breasts in a single layer in the pan. Cook for about 3-4 mins on each side. Transfer to a plate and cook the remainder of the chicken.
Wipe the pan clean using paper towels. Turn on medium heat. Add the olive oil and butter followed by the minced garlic. Cook for a couple of minutes (making sure it doesn’t burn). Add the chicken stock, lemon juice and parsley. Season with salt and pepper. Let the broth simmer for a minute and return for the cooked chicken back into the pan. Turn the heat up slightly then simmer for 6-8 minutes or until the sauce thickens. Transfer to a plate and spoon the sauce all over the chicken. Sprinkle with more parsley, serve and Devour!
