Bechamel Sauce
1 small onion
4 oz butter
sprig of thyme
1 t salt
8 c whole milk
1/2 c flour
white pepper, cayenne, and nutmeg to taste
Sweat onion, butter, thyme, and salt until soft; cook covered on low heat.
Warm whole milk.
Whisk in flour and cook for 1 minute.
Whisk in milk.
Heat low until thick and smooth.
Strain.
Season with salt, white pepper, cayenne, and nutmeg to taste.
