pork with garlic and fresh chile

2 tablespoons peanut or safflower oil

3 large garlic cloves, finely chopped

1 Ib. lean pork, finely sliced

2 tablespoons Thai fish sauce

2 tablespoons light soy sauce

2 large fresh red chiles, finely sliced

Hướng dẫn

Heat the oil in a wok or skillet until a light haze appears. Add the garlic and stir-fry until golden brown. Add the pork and stir-fry briefly.

Add the fish sauce, soy sauce, and chiles, stirring briefly all the time. By now the pork should be cooked through. Spoon onto a serving dish and top with sliced scallions. Serve with 3-4 other Thai dishes, including rice, noodles, and perhaps fresh pickle.

Variations Instead of the pork, use a similar quantity of finely sliced chicken or beef, or shelled and deveined shrimp.

Shrimp or squid with garlic and peppercorns is another favorite Thai dish, both in Thailand and in Thai restaurants worldwide. Follow the main recipe, but instead of the chiles, use 1 teaspoon white peppercorns, crushed with a mortar and pestle.
