Best Ever Lemon Muffins

Muffins dry ingredients :

1 1/2 cups all-purpose flour

1/2 tablespoon corn starch

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

Muffins wet ingredients :

3 eggs

1 cup cane sugar

2 tablespoons butter room temp

Zest of 2 lemons

1/3 cup fresh lemon juice

1 teaspoon lemon extract

1/2 cup olive oil

3/4 cup plain Greek yogurt

Lemon curd ingredients:

¾ cup fresh lemon juice

¾ cup white sugar

½ cup unsalted butter, cubed

3 large eggs

1 tablespoon grated lemon zest

Muffins:

Set oven to 350°F

Combine dry ingredients in a medium bowl and set aside

Cream together all wet ingredients in a stand mixer (or by hand with a whisk) until well combined

Add dry ingredients to wet and mix until batter is just combined

Spread batter evenly among 12 muffin tins

Bake for 20-30 minutes checking with a toothpick for readiness (this will depend on your oven- they should still be a pretty pale yellow on top :)

Lemon curd:

Combine lemon juice, sugar, butter, eggs, and lemon zest in a 2-quart saucepan.

Cook over medium-low heat, whisking constantly to prevent the eggs from curdling, until mixture starts to get thick and bubbles rise to the surface, about 5 to 6 minutes.

Remove saucepan from the heat; transfer lemon curd into a large bowl.The curd will thicken more as it cools.

Once cooled cut little divots into the muffins, dust with powdered sugar and add lemon curd to center
