Carol Coffman’s Maple Pecan Pie

1 refrigerated or frozen pie crust (or make your own)

1 ¼ cups (5 oz) pecan halves

¾ cup sugar

2 eggs

1/3 cup corn syrup

1/3 cup maple syrup

2 Tbsp butter, melted

2 Tbsp bourbon or whiskey (optional)

1 tsp vanilla

Hướng dẫn

Preheat oven to 350 degrees. Follow directions for pie crust package for a baked pie. Arrange pecan halves in concentric circles on top of the pie crust. Combine sugar and eggs in a medium bowl; whisk until well blended. Stir in corn syrup, maple syrup, butter, bourbon (if desired), and vanilla; mix well. (Pecans will rise to the surface during baking.) Bake 40 minutes or until golden brown and center is set. Cool completely on a wire rack.

Mike (Carol Coffman’s brother-in-law), the resident pecan pie connoisseur, has declared this the best pecan pie ever. For chocolate pecan pie, melt 4 squares (1 oz. each) of semi-sweet chocolate with butter.
