We’re coming up to the end of peach season, and what a way to go out 🤤

Dad’s Peach Ice Cream ❤️🍑🍨

2 cups heavy cream

1 cup whole milk

1 cup granulated sugar, divided

1/2 tsp salt

4 egg yolks

3 large, ripe peaches, divided

1-2 tbsp peach extract (see notes)

In a large saucepan, whisk the cream, milk, 2/3c of the sugar, and salt on low heat until just simmering.

In a bowl, whisk the 4 egg yolks. Continuously whisk while adding about ⅓ of the warm cream mixture. Then, add that yolk and cream mixture back to the saucepan with the rest of cream. Whisk over medium heat until the mixture coats back of a spoon.

Pour over a fine mesh sieve into a bowl. Cover and chill until cold.

Blanch and peel the peaches. Cut two of the peaches into smaller chunks and puree in a food processor.

Dice the 3rd peach into ¼” chunks or even smaller (smaller than I did in the video!See notes.)

Place tiny peach chunks in a small bowl and sprinkle with the remaining 1/3cup of sugar. Set aside for 1 hour+.

Remove ice cream base from the fridge. Add desired amount of peach extract and the peach puree. Mix well.

Churn in ice cream maker according to manufacture’s instructions. About halfway through, option to drain the syrupy liquid from tiny peach chunks and add that to ice cream.

In the last 2 minutes of churning, add in tiny peach chunks.

Place the ice cream in a freezer-safe container. Cover and freeze for 4-5 hours. (Or eat immediately for a soft-serve consistency)

Notes:

High quality peach extract can boost the peach flavor. 1tbs keeps it subtle and natural. 2 can really punch it up. It tastes stronger in the bowl than it will after it is churned, so adjust to personal taste.

The smaller the peach chunks, the better!!! Any fruit in ice cream will get icy because of its water content, but keeping the chunks super small and macerating with sugar will help keep them soft. #peachseason
