DATE AND NUT PUDDING (HELEN'S)

BATTER:

1 C Brown sugar

1 Tbsp Butter

1/2 C Dates - chopped

1/2 C Walnuts - chopped

1/2 C Milk

1 C All Purpose Flour

1 tsp Baking Powder

1/4 tsp Salt

SAUCE:

1 C White sugar

1 Tbsp Butter

1 1/4 C Boiling Water

1 tsp Vanilla

Combine all ingredients for batter, brown sugar, butter, dates, nuts, milk, flour, baking powder, and salt, together and mix well.

Pour into an 8" X 8" greased and floured pan.

Mix the sauce, white sugar, butter, boiling water, vanilla, and pour on top of the batter.

Bake @ 350F for 40 to 45 minutes.

Another Grandma Bowser recipe via Aunt Dorothy

This is labelled Date & Nut Pudding in Grandma's recipe collection. BUT, it seems very similar (identical?) to a dessert called "Poor Man's Pudding" that Grandma often served around the holidays. I have been looking for the Poor Man's recipe for decades and no one in the family seemed to know where it had disappeared to. I will make this recipe and see if it is as I recall the Poor Man's Pudding.
