Smoky Roasted Sweet Potato

• 2 pounds sweet potatoes, scrubbed clean and diced

• 8 ounces bacon, chopped

• 1½ teaspoons chili powder

• ¾ teaspoon sea salt

• ½ teaspoon ground cinnamon

• ¼ teaspoon cayenne pepper

1. Preheat the oven to 400°F.

2. In a large bowl, toss together all of the ingredients. Spread onto 2 rimmed baking sheets.

3. Place in the oven and roast for 15 minutes.

4. Toss to coat the potatoes in the rendered bacon fat. Continue roasting for 15 minutes, until the potatoes are crisp.
