Blueberry Coffee Cake Muffins

Preheat your oven to 375F.

In a large mixing bowl, beat together 1/2 cup of melted butter, 1/2 cup of granulated sugar, 1/4 cup of brown or coconut sugar, 2 eggs, 1 tsp of vanilla, and 1/2 cup of milk until smooth.

Then, mix in 1 & 3/4 cups of all purpose flour, 2 tsp of baking powder, 1/4 tsp salt, and 1/2 tsp of cinnamon until just combined. Be careful to not over mix!

Then, toss 1 cup of fresh or frozen blueberries in 2 tbsp of flour. Gently fold them into the batter.

Transfer the batter to a lined muffin tin.

Then, mix together the streusel stopping—1/2 cup of brown or coconut sugar, 1/2 cup of all purpose flour, 1 tsp of cinnamon, 4 tbsp of softened butter, and a pinch of salt.

Crumble this on top of muffins, and transfer to the oven (middle rack) to bake for 23-25 minutes.

Once they’re done baking, let them rest for about 15 minutes before serving and topping with cream cheese icing.

Cream cheese icing—mix together 1/4 cup of softened cream cheese, 1/2 cup of powdered sugar, and 3 tbsp of milk
