1/4 cup milk (dairy or non-dairy)

Preheat the oven: Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper for easy removal.

Prepare the pistachios: In a food processor, pulse the shelled pistachios until finely ground but not past a flour consistency. You want some texture, so be careful not to over-process.

Mix wet ingredients: In a large mixing bowl, combine the melted coconut oil (or butter), honey, eggs, and vanilla extract. Whisk together until well combined.

Combine dry ingredients: In another bowl, mix the almond flour, ground pistachios, baking powder, ground cardamom, and salt.

Combine wet and dry mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Then, add the milk and mix until the batter is smooth.

Pour into the pan: Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Bake the cake: Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. The cake should be lightly golden on top.

Cool the cake: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely.

Serve: Once the cake is completely cool, drizzle with honey and sprinkle with crushed pistachios for garnish. Slice and serve as a delightful dessert or a sweet treat with tea or coffee.

For added flavor, you can toast the pistachios lightly in a dry skillet before grinding them.
