Banana Bread Cookies

65g mashed ripe banana

120ml melted butter

200g light brown sugar

1 egg yolk

1 tablespoon (yes tablespoon!) vanilla extract

165g plain flour

Half teaspoon baking soda

2 teaspoons of cinnamon

Half teaspoon of salt

100g milk chocolate, chopped

50g dark chocolate, chopped

In a large bowl, stir together mashed banana, melted butter and sugar until combined.

Stir in the egg yolk and vanilla extract.

Sift in the flour, baking soda, cinnamon and salt. Or don’t sift, it doesn’t make a huge difference tbh. Gently fold the dough together until no streaks of flour are visible — don’t overmix!

Finally, gently fold in the chocolate chunks.

Cover the cookie dough with a tea towel and leave to rest for 15 minutes. In the meantime, clean your kitchen and preheat the oven to 175°C.

Add tablespoons of cookie dough to a lined baking sheet, leaving enough space around each to spread out. I baked mine 5 at a time. Bake the cookies for 11 minutes then leave to cool for 5-10 minutes.

Tip: If your cookies aren’t perfectly round when they come out of the oven, place a cup/mug/bowl that is slightly bigger than the cookie on top of it. Shimmy the cup around in a circle. This will round out the edges of your cookie. I also recommend studding some extra chocolate on top of each cookie while they’re still hot.
