This brown sugar glazed meatloaf is juicy, tender, and topped with a sticky-sweet glaze that caramelizes beautifully in the oven. Served over creamy mashed potatoes, it’s the kind of warm, comforting dish that feels right at home on a Christmas table or any cozy winter night.
Ingredients (Serves 4–6) For the Meatloaf
1½ lb (700 g) ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
½ cup milk
2 eggs
½ cup ketchup
2 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
½ tsp paprika
1 tbsp chopped fresh parsley or thyme
Brown Sugar Glaze
½ cup ketchup
⅓ cup brown sugar
1 tbsp Dijon mustard (optional, but great for balance)
Creamy Mashed Potatoes
2 lb (900 g) potatoes, peeled and cubed
4 tbsp butter
½ cup warm milk or cream
Salt & pepper, to taste
How to Make It 1️⃣ Prepare the Meatloaf

Preheat your oven to 350°F (180°C). In a small bowl, mix breadcrumbs and milk. Let soak for 2–3 minutes.
In a large bowl, combine ground beef, onion, garlic, soaked breadcrumbs, eggs, ketchup, Worcestershire sauce, salt, pepper, paprika, and herbs. Mix gently until just combined.
Shape into a loaf and place in a greased baking dish.
Make the Brown Sugar Glaze
In a bowl, mix ketchup, brown sugar, and Dijon mustard. Spread half of the glaze evenly over the meatloaf.
Bake
Bake uncovered for 40 minutes. Remove from oven, spread remaining glaze on top, and return to oven.
Bake another 15–20 minutes, until cooked through (internal temp 160°F / 71°C).
Let rest 5 minutes before slicing.
Make the Mashed Potatoes
While the meatloaf bakes, boil potatoes in salted water until fork-tender. Drain well, then mash with butter, warm milk, salt, and pepper until smooth and creamy.
Serve
Slice the meatloaf and serve over mashed potatoes. Spoon extra glaze from the pan over the top and garnish with fresh herbs.
