500g (1.1 lbs) white beans, soaked overnight
500g (1.1 lbs) pork shoulder, cubed
200g (7 oz) sausages, sliced
2 carrots, chopped
1 onion, diced
3 garlic cloves, minced
500ml (2 cups) chicken stock
400g (14 oz) tomatoes, chopped
2 tbsp olive oil
1 tsp thyme
1 bay leaf
Salt and pepper, to taste

Preheat the oven to 160°C (320°F).
In a large pot, heat olive oil over medium heat and brown the pork cubes on all sides. Remove and set aside.
Add the onions, carrots, and garlic to the pot. Cook until softened and fragrant.
Return the pork to the pot and add the soaked beans, sausages, chopped tomatoes, chicken stock, thyme, bay leaf, salt, and pepper. Stir well and bring to a gentle boil.
Transfer the pot to the oven and bake for about 2 hours, stirring occasionally, until the beans are tender and the flavors meld together.
Serve hot with crusty bread for an authentic French experience!
