Mujaddra - Recipe from Sofra

1 1/2 cups of green lentils
2 cups of long grain rice
1 tsp cumin
1 tsp 7 spice bharat
Salt to taste
1 heaped TBS ghee
1/3 cup of olive oil
2 large brown onions

The combination of the mujaddara and shish barak is spectacular in this spread, the lentil rice making the perfect base to soak up all of the flavours from the garlic yogurt broth and exactly how my mother would make it.
Peel and slice the onions into thin slices and season with salt, set aside.
Wash the lentils well and place in a medium non-stick pot along with 4 cups of water, cover and bring to a boil. Wash the rice well and once the lentils are half cooked add the rice, salt and spices, mix and bring to a boil before turning down the heat to low and allowing to cook for 20 minutes. Place the onions along with the ghee and oil in a medium sized fry pan on high heat and cook until the onions have turned a dark brown colour, making sure you are stirring them constantly so they cook evenly and do not burn. Drain the oil into the pot of rice and remove the caramelised onions and place them on a plate to garnish.
To serve, place the mujaddara on a deep flat serving dish and mount it so it has some height, garnish with the caramelised onions.
