Bunch a Burritos

Ingredients- black beans, red quinoa, avocado, cauliflower, tomato, red onion, cilantro, taco seasoning, garlic, bell pepper, tortillas, light coconut milk, vegan cheese, olive oil, salt

1.) Sauté a whole red onion with one green and red bell pepper in 2 tablespoons of olive oil, after a minute or two add in one packet of your favorite taco seasoning and two or three smashed cloves of garlic

2.) After 5 minutes add in a cup of cooked red quinoa and two cans of drained black beans season with salt and reduce the heat to low

3.) Rinse and remove the leaves and stem from a head of cauliflower, roughly chop and toss into a pot with a can of light coconut milk and a little salt, simmer for 15-20 minutes until mushy then blend until smooth

4.) Put your cauliflower purée back into the sauce pan at a low heat, thin it out with a little water then begin to slowly add your vegan cheese whisking as you go until about half a bag is melted in

5.) Chop up a few tomatoes, a handful of cilantro and 2 avocados then add to your quinoa and beans give it a quick mix then stuff and wrap your burritos

6.) Toast the burritos on each side with a little oil plate with some of that extra cheese sauce & enjoy!
