Ingredients x 2 pancakes:
Leek 2 tabsp (finely chopped)
1/2 garlic (finely chopped)
Mushrooms a few slices
Parsley 1 1/2 tbsp chopped
Baking powder 1/2 tsp
Baking soda 1/4 tsp
Chickpea flour 135g
Salt 1/2 tsp
Water 170 ml
Olive oil 2 + 2 1/2 + 2 + 1 1/2 tbsp
Process:

Cook the leek and garlic in 2 tbsp of olive oil for 4-5 minutes. Let cool completely.
Mix the chickpea flour with the cooked leek and garlic, parsley, baking powder, baking soda, salt and water.
When the dough starts to form, add 2 1/2 tbsp of olive oil and mix until smooth. Let it ferment for 10 minutes.
Add 2 tbsp of olive oil, pour half of the dough, place the mushroom slices on top and cook over very low heat*.
When it is ready, turn it over, add another 1 1/2 tbsp of olive oil on the edge and let it cook.
Serve with tomatoes and olives on top. Enjoy! You can also serve with a poached egg or smoked salmon.
TIPS:
be careful, because it does not have egg, chickpea flour can burn very quickly so the heat must be very low.
