Sweet Pea Coulis

Yield: about 3 c

2 average sized leeks, white and green parts

clarified butter

2 10-oz bags organic green peas

1/4 t garlic

2 c chicken or veggie stock

leaves from 4-5 sprigs mint

few pinches salt

pinch nutmeg

few pinches white pepper

Cook leeks and garlic covered over low heat until soft

Add peas, stock, and mint leaves. It is not necessary to further cook this sauce, as it is

kept warm.

Puree and season to taste.

Strain

Strain again through an ultra-fine strainer.
