this is my favorite scone recipe from my Dad’s VERY old “Cuisine at Home” cookbook that he’s been making since I was a wee lass. I have played around with lots of scone variations in the years but always come back to this one! The technique I use is different from the book but the measurements here are the same.

SO tender and moist, they fall apart in your mouth😩 send this to the scone haters in your life!

RECIPE:

2¾ cups (344 g) all-purpose flour

½ cup (100 g) sugar

2 Tbs (24 g) baking powder

1 tsp (3 g) salt

1 cup (249g) heavy cream, cold

12 tablespoons (170 g) unsalted butter, cold, grated

1 cup (120 g) dried blueberries

Zest of 1-2 lemons

Grate your butter and set in the freezer to chill. Mix dry ingredients & zest. Add in butter and gently mix till combined, breaking up any big clumps with your fingers. Stream in cream and blueberries. Mix gently by hand then turn out on counter. Working quickly, press the dough together until it forms a disc. It will be dry!! Cut into 8 equal triangles. Refrigerate for 30m to overnight. Bake at 375 for 20-30 minutes.
