Spiced Tea Bread

2 cups mixed dried fruit

1 ½ cups hot tea, brewed c / 1 tea bag, steeped 7-10 min

4 tsp dark brown sugar

1 ½ cups whole wheat flour

1 ¼ cups all purpose flour

2 T pumpkin pie spice*

2 tsp baking powder

1 tsp salt

1 egg, beaten

Hướng dẫn

Preheat oven to 375 degrees and butter an 8 cup loaf pan.

In a large bowl, put in the dried fruit and pour the hot tea over the fruit. Stir in the brown sugar and let the mixture cool for 5 minutes.

In a bowl, whisk together the flours, pumpkin pie spice, baking powder, and salt. Stir the dry ingredients into the fruit mixture, then stir in the egg until well combined.

Scrape the batter into the pan, level the surface, and place in the top third of the oven. Bake until toothpick inserted in the center can come out clean. 50 minutes or less is recommended.

Let the loaf cool in the pan for 10 minutes, then turn it out onto a wire rack.
