Here’s What I Made for Dinner Ep3: Sweet & Spicy Crispy Tofu

1 block firm tofu, drained, rinsed, pressed, dried, and cut into equal-sized cubes

1 cup cornstarch

1 tbsp salt

1 tsp black pepper

2-3 tbsp olive oil

4 tbsp soy sauce

4 tbsp maple syrup

1 tbsp pickled jalapeño brine

1 tbsp white miso paste

2 gloves garlic, grated

1 tsp freshly grated ginger

1 tsp mushroom seasoning (I used Trader Joe’s)

white rice, sliced spring onion, and sesame seeds for serving

mix cornstarch, salt and pepper together in a large bowl or tray with high sides. add all the tofu cubes and coat evenly. in a separate bowl, combine the soy sauce, maple syrup, pickled jalapeño brine, white miso paste, garlic, ginger, and mushroom seasoning. whisk until combined and set aside.

heat a non-stick pan over medium high heat with the olive oil. once the oil slightly smokes and becomes more fragrant (about 2-3 mins), add the tofu cubes to the pan. make sure all cubes are touching the bottom. allow the cubes to sear 3-4 mins on the first side, then start tossing the cubes in the pan to coat evenly with the oil and achieve a golden brown sear on all sides, about 4-6 more mins. pour the prepared sauce over the cubes and toss to coat evenly about 1 min.

serve tofu on rice with spring onion and sesame seed. dig in and enjoy.
