Peanut Butter Oatmeal Chocolate Chip Cookies

Ingredients (10–12 cookies):

1 cup natural peanut butter

1 cup rolled oats (gluten-free if needed)

1 ripe banana, mashed

¼ cup maple syrup or honey

½ tsp baking soda

1 tsp vanilla extract

¼ cup dark chocolate chips (dairy-free if desired)

Pinch of salt

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a bowl, mash the banana and mix with peanut butter, maple syrup, and vanilla.

Stir in oats, baking soda, and salt until combined.

Fold in chocolate chips.

Scoop about 1 tablespoon dough per cookie onto the baking sheet and gently flatten.

Bake 10–12 minutes until edges are lightly golden.

Let cool for 5 minutes before serving.

Tips

For extra texture, add chopped walnuts or almonds.

Use 80–85% dark chocolate chips for a lower-sugar option.

Store in an airtight container for 3–4 days, or freeze for 1 month.
