Crispy Chicken Rice Paper Dumplings

250g Chicken mince

2 spring onions, diced

1 garlic cloves, finely chopped

10g ginger, finely chopped

Small bunch coriander, finely chopped

1 red chilli, seeds removed finely chopped

2 tsp soy sauce

1 tsp honey

1 tsp oyster sauce

1 tsp sesame oil

6 rice paper rolls

Black and white sesame seeds, for coating

Peanut Sauce

1 tbsp PB

1 tbsp honey

1 tbsp soy

1/2 lime, juice only

2 tbsp milk of choice, I used coconut milk

1-2 tsp sriraccha

Hướng dẫn

Mix the chicken mince with the spring onion, coriander, chilli, garlic ginger, soy sauce, honey, oyster sauce and sesame oil.

Take a tray or plate of warm water and soak a rice paper roll for around 30sec-1 minute until it becomes malleable. Lay on the rice paper on a damp chopping board, add a heaped tbsp of the chicken mince onto the roll, the gently but tightly roll into a parcel. Continue until all the chicken mince is used up.

Light spray with oil, then coat with sesame seeds. Airfry for 17-20 minutes at 200 degrees C until golden and crispy.

For the sauce add everything into a blender and blend until smooth.
