1¾ cups water or broth
1 cup quinoa, rinsed
Salt and black pepper
14 ounce can of any beans
1 garlic clove
2 tbsp extra-virgin olive oil
1 bunch collard greens
1 lemon
Bring broth and quinoa to a boil in a large pot with a generous pinch of salt and pepper, then cover, reduce to low, and simmer for 13 minutes. While it cooks, rinse the beans and toss them with grated garlic, olive oil, and a pinch of salt and pepper; prep the greens by removing tough stems and chopping. Scatter the greens over the quinoa, season well, cover, and cook until the quinoa is tender, 5 to 7 minutes more. Remove from heat, spoon the beans over the top, cover, and let sit for 5 minutes, then finish with lemon zest, a squeeze of lemon juice, and more salt and pepper to taste. Some other combos:
1: farro, navy bean, collard greens
2: bulgar, black beans, kale
3: quinoa, black eyed peas, cabbage
