VEGETABLES:

1 red onion, diced

1 bell pepper (any color), diced

1/2 jalapeño, minced

1/2 chilli pepper, minced

4 garlic cloves, chopped finely

MEAT:

1 lb. ground beef

~ 8 slabs of bacon (1 package)

OTHER:

Guinness Stout beer - tall can

Beef stock

Can of pinto beans

Can of kidney beans

Can of fire roasted diced tomatoes

Tomato paste

Cocoa powder

SEASONING:

1 tsp garlic powder

1 tsp onion powder

1 tsp chilli powder

1 tsp cumin

1 tsp cayenne pepper

1 tsp smoked paprika

A pinch of salt

TOPPINGS:

Shredded cheddar cheese

Sour cream

Cilantro, chopped

Green onion, sliced

Hướng dẫn

1. Start by preparing the seasoning. Mix it all together in a bowl.

2. Prepare all the veggies and slice the bacon. Drain and rinse your pinto and kidney beans.

3. Break up the meat a little in a large bowl. Add half the seasoning and loosely mix.

4. In a pot over medium heat, add your bacon. Cook it down, so the fat comes out, take out the bacon with a slotted spoon and leave the grease in the pot.

5. Now add the ground beef to the pot and cook until it’s cooked, about 7 min.

6. Move the ground beef to a paper towel lined plate.

7. Now back in the pot, add half (not all) of the seasoning that is left.

8. Then add all the vegetables and garlic.

9. Wait for the veggies to soften a bit. Then add a few spoons of tomato paste.

10. Add can of fire roasted tomatoes.

11. Add full can of Guinness stout beer.

12. Add can of pinto and kidney beans.

13. Add your bacon and meat back in.

14. Add the remaining seasoning.

15. Add a cup of beef stock.

16. Add a spoon of cocoa powder.

17. Let simmer on low or medium heat for 20-30 min.

18. Top with shredded cheese, sour cream, cilantro, and green onion.
