Caramelized Onion Pasta

2 tbsp butter

2 tbsp oil

2 large yellow onions, thinly sliced

6 cloves fresh garlic, minced

Salt to taste

1 tbsp chili oil (adjust to taste)

1 cup unsweetened heavy whipping cream

1 tsp soy sauce

1/4 cup chicken stock

1/2 tsp black pepper

1 tbsp freshly chopped parsley

Squeeze of lemon juice

1/2 Pasta water (if needed)

1/2 cup freshly grated Parmesan cheese

8–10 oz pasta (spaghetti, fettuccine, or rigatoni work well)

Method: Bring apot of salted water to a boil. Cook the pasta according to the package instructions until it’s al dente.

Reserve half a cup of pasta water, then drain the pasta and set it aside.

In a large pan, heat butter and oil over medium-low heat. Add the sliced onions and a pinch of salt. Cook the onions slowly for 20-25 minutes, stirring occasionally, until they turn deep golden brown. Then, add the minced garlic and cook for another minute until it’s fragrant. Stir in the chili oil.

Pour in the chicken stock and scrape the pan to release the browned bits. Add the heavy cream and soy sauce. Season with black pepper. Let the sauce simmer gently for 3-4 minutes until it thickens slightly.

Add the cooked pasta to the sauce and toss it well to coat. If the sauce is too thick, add a splash of the reserved pasta water.

Stir in the Parmesan cheese until it melts and becomes creamy. Add the lemon juice and parsley. Taste and adjust the salt if necessary.

Serve the pasta immediately, garnished with extra Parmesan and parsley on top.
