Blue Velvet Cake with Cream Cheese Frosting

For the Cake:

2 1/2 cups all-purpose flour

1 1/2 cups granulated sugar

1 tsp baking soda

1 tsp salt

1 tsp cocoa powder

1 1/2 cups vegetable oil

1 cup buttermilk, at room temperature

2 large eggs, at room temperature

2 tbsp blue food coloring

1 tsp vanilla extract

1 tsp white vinegar

For the Cream Cheese Frosting:

1 cup (2 sticks) unsalted butter, softened

16 oz cream cheese, softened

4 cups powdered sugar

2 tsp vanilla extract

Preheat Oven: Preheat to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: Sift together flour, sugar, baking soda, salt, and cocoa powder in a medium bowl.

Combine Wet Ingredients: In a large bowl, whisk together oil, buttermilk, eggs, food coloring, vanilla, and vinegar.

Combine and Bake: Gradually add dry ingredients to wet, mixing until just combined. Divide batter between pans and bake for 25-30 minutes. Cool completely.

Prepare Frosting: Beat softened butter and cream cheese until creamy. Gradually add powdered sugar, then beat in vanilla.

Assemble Cake: Level cake layers if needed. Frost the first layer, stack the second, and frost the top and sides. Decorate with blue sprinkles or edible glitter for a festive touch.
