Ingredients (makes 8–10 fritters)

1 cup cottage cheese

2 large eggs

½ cup oat flour (or almond flour)

1 apple, grated and squeezed dry

1 tsp cinnamon

1–2 tbsp honey or maple syrup (optional)

½ tsp baking powder

Pinch of salt

Make batter: In a bowl, combine cottage cheese, eggs, flour, cinnamon, honey (if using), baking powder, and salt. Stir in grated apple until thick and well mixed.

Heat pan: Lightly grease a nonstick skillet and warm over medium heat.

Cook fritters: Spoon small mounds of batter into the pan. Flatten slightly and cook 2–3 minutes per side until golden and set.

Serve: Enjoy warm with Greek yogurt, maple syrup, or a dusting of cinnamon.

Optional: Add chopped nuts or raisins for texture.
