Teriyaki Salmon Poke style bowl

1 kiwi
1 spring onion
1 red chilli
1 lime
80g sugar snap peas
150g jasmine rice
1 garlic clove
2 salmon fillets
50g teriyaki sauce

Peel kiwi halve lengthways then chop into 1cm chunks
Halve the chilli lengthways, deseed & finely chop
Trim the spring onion & thinly chop
Zest & half the lime
Pop kiwi, chilli, spring onion into a bowl, squeeze in lime juice & olive oil
Season with salt & pepper, mix together & set aside

Bring some water to boil in a saucepan, stir in the rice and cook

Halve the sugar snap peas lengthways down the middle, peel & grate the garlic.
Heat drizzle of olive oil, add sugar snap peas, fry until tender, 2-3 mins, stir in the garlic & cook for 1 minute, pop in a bowl & cover with foil

Season salmon with salt & pepper, fry in a drizzle of olive oil for 4-5 mins each side.
Once cooked carefully peel the skin off and discard. Pull apart the salmon with a fork, add the teriyaki sauce to the pan & gently toss to combine & coat the salmon

Fluff up the rice with a fork & gently stir in lime zest
Serve rice in bowls with the salmon on top in 1/3, the kiwi salsa in another 1/3 & sugar snap peas in remaining 1/3
