Apple mix:
2 x apples, peeled and diced
45g granulated sugar
1 tsp cinnamon
Cake:
360g plain flour
200g granulated sugar
4 tsp baking powder
300ml whole milk, room temp
1 tsp vanilla extract
2 large eggs, lightly beaten, room temp
110g unsalted butter, melted
Cinnamon swirl:
120g unsalted butter, melted
150g light brown sugar
2 tbsp cinnamon
Glaze:
200g icing sugar
40ml milk
Tin size: 8x10”

Bake at: 190°C / 170°C (fan) for 40–45 mins
Tip: The cinnamon swirl and apple bits will stay sticky when hot—check the cake part with a toothpick for doneness!
