Roasted Mediterranean Smoky Tofu Bowl

Ingredients (serves 4)
250g firm tofu, pressed and sliced
1 tbsp olive oil
1 tsp smoked paprika
1 tbsp soy sauce
200g giant couscous
250g cherry tomatoes
2 red peppers, quartered
1 tbsp olive oil (for roasting)
Handful of rocket leaves
For the roasted red pepper hummus:
1 roasted red pepper
1 tin chickpeas, drained
2 tbsp tahini
1 clove garlic
Juice of 1 lemon
2 tbsp olive oil
Salt and pepper, to taste

Preheat oven to 200°C. Toss cherry tomatoes and red peppers in olive oil, season, and roast for 25–30 mins until blistered and slightly charred.
Cook giant couscous according to packet instructions, then fluff with a fork and season lightly.
Blend all hummus ingredients until smooth and creamy. Adjust seasoning to taste.
Mix olive oil, smoked paprika, and soy sauce, then coat the tofu slices. Pan-fry until golden and crisp on both sides.
Assemble bowls with couscous at the base, topped with tofu, roasted veggies, hummus, and rocket. Drizzle with olive oil and serve warm.
