2 tablespoons extra virgin olive oil

1 kg beef cheek, cut into 4 cm cubes

1/2 teaspoon salt

1 teaspoon pepper

2 tablespoons plain flour

1 brown onion, chopped

2 garlic cloves, chopped

2 carrots, chopped into 4 cm chunks

3 celery ribs, chopped into 4 cm chunks

1 tablespoon dried Italian herbs

2 tablespoons tomato paste

400 grams tinned tomatoes

1 cup beef stock

2 tablespoons Worcestershire sauce

3 cups chopped mushrooms

1 tablespoon fresh thyme (or 1 teaspoon dried)

Fresh parsley, to serve

Notes:

Freezer-friendly: Perfect for meal prep. Let it cool completely, portion into airtight containers, and freeze.

Dump bag-friendly: Brown the beef first (optional), then place all ingredients except mushrooms, thyme, and parsley into a freezer bag. Defrost overnight before cooking.

Serve with: Creamy mashed potato, rice, or crusty bread.

Optional add-ins: A splash of red wine or a bay leaf for deeper flavour.
