Sticky Citrus Protein Bowl

3 garlic cloves

small nub ginger

2 spring onion

2 tbsp soy sauce

1 tsp rice vinegar

1 tbsp brown sugar

juice of 1 lime

400g firm tofu (16g protein pp)

soy sauce, cornflour, salt n pepper

100g roasted cashews (9g protein pp)

380g cooked quinoa (8g protein pp)

200g steamed broccoli (3g protein pp)

roughly 36g of protein per portion!

Hướng dẫn

break the tofu into chunks, coat in soy sauce then the cornflour and salt n pepper then spray with oil and bake or air fry til crispy.

fry the minced garlic, ginger until soft and browning then add roughly chopped spring onion, soy sauce, rice vinegar, sugar and lime juice then simmer to reduce.

toss the crispy tofu, broccoli and nuts in the sauce then serve with quinoa, top with the garnishes then serve and enjoy!
