Pistachio-crusted Brie Bites with Raspberry Honey Glaze

1 small wheel of brie cheese, cut into 1-inch cubes

½ cup finely chopped pistachios

1 sheet puff pastry, thawed

1 egg, beaten (for egg wash)

1 tbsp honey

1 tsp lemon juice

Fresh thyme leaves, for garnish (optional)

Prepare the Puff Pastry:

Preheat oven to 375°F (190°C). Cut puff pastry into 2-inch squares. Place one cube of brie in the center of each square.

Add the Pistachio Crust:

Sprinkle chopped pistachios over the brie and gently press them in.

Fold & Seal:

Bring the corners of the puff pastry over the brie to form a bite-sized parcel. Brush with beaten egg for a golden finish.

Bake:

Arrange bites on a parchment-lined baking sheet and bake for 15–18 minutes until puffed and golden brown.

Make the Raspberry Honey Glaze:

In a small saucepan, heat raspberry preserves, honey, and lemon juice over low heat until smooth and glossy.

Serve:

Drizzle the warm raspberry honey glaze over the baked brie bites. Garnish with fresh thyme and a few extra pistachio bits. Serve immediately.
