Raspberry Swirl Sugar Cookies

1 cup (225g) unsalted butter, softened

1 cup (200g) granulated sugar

1 large egg

2 tsp vanilla extract

2 3/4 cups (350g) all-purpose flour

1/2 tsp baking powder

1/4 tsp salt

1/2 cup (150g) raspberry jam (strained for a smoother swirl)

Optional: Sparkling sugar for garnish

Prepare the Dough: In a large bowl, cream the butter and sugar together until light and fluffy. Add the egg and vanilla extract and beat until combined.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until a soft dough forms.

Chill the Dough: Divide the dough into two portions. Flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Roll and Fill: Roll one disk of dough on a lightly floured surface into a rectangle, approximately 1/4-inch thick. Spread a thin, even layer of raspberry jam over the dough.

Roll and Slice: Starting from one long edge, roll the dough tightly into a log. Repeat with the second disk. Wrap each log in plastic wrap and freeze for 30 minutes.

Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

Slice and Bake: Using a sharp knife, slice each log into 1/4-inch thick rounds. Place cookies 2 inches apart on prepared baking sheets.

Bake: Bake for 10-12 minutes, or until the edges are lightly golden. Cool on the baking sheets for 5 minutes before transferring to a wire rack.

Garnish: Sprinkle with sparkling sugar while still warm for an extra festive touch!
