Chewy Potato Balls (dumplings)

1 large potato, around 500g
70g-100g tapioca starch (add in increments until you get a dough) - though i used tapioca starch, I recommend using potato starch
pinch salt
sauce:
1 ½ tsp chilli powder
1 tsp gochugaru
1 garlic, minced
1 green onion, minced
1 red chilli, minced (remove if you don’t want)
½ tsp sesame seeds
¼ cup hot oil
1 tsp curry powder
1 tbsp soy sauce
1 tsp sugar
½ tbsp black vinegar
½ tbsp peanut butter
1 ½ tsp chinese satay sauce
pinch msg
toppings:
chives
1 tsp chilli oil
coriander

peel and cut the potato into chunks
in a pot of boiling water, add the potato chunks and boil until it’s fork tender, around 10-15 minutes
for the sauce, add garlic, spring onion, sesame seeds, curry powder and chilli powder to a heat proof bowl then pour hot oil before adding soy sauce, black vinegar, chinese bbq sauce, peanut butter and give it a good mix. Add some hot water to loosen the mixture if needed.
once the potatoes are cooked, drain and add into a bowl and mash up until there are no lumps (use a potato ricer to make the process easier)
once smooth, add salt, potato starch and mixture together until a dough is formed
portion out the dough until you get small equal sized balls
In a pot of boiling water, add in the potato balls and boil for around 4 minutes or until they float to the top
Place them into a bowl of cold water to cool them down
Add the cooked potato dumplings into a bowl and top with the sauce made earlier. Top with coriander and chilli oil.
