Pasta with Fennel, Parsley and Olives

9 oz tagliatelle
4 tbsp garlic oil, divided
1 cup fennel, sliced
1 cup parsley, chopped
1 cup olives, sliced
1/4 tsp red pepper flakes
Zest and juice from one lemon
Salt

Cook pasta according to package directions. Drain, reserving about 1/2 cup of the cooking water, and set both aside.
Meanwhile, grab a large saute pan, and heat 1 tbsp garlic oil over medium heat. Add fennel and cook, stirring occasionally, until starting to soften and pick up color. Add parsley and stir to coat, cooking until the parsley turns a dark green. Add olives and red pepper flakes and stir together.
Add drained pasta to pan, along with the cooking water and remaining oil. Toss together to coat the pasta in the sauce.
Remove from heat and stir in the lemon zest and juice. Season with salt to taste.
