Pesto Pasta

10 oz hot italian pork sausage
1 lemon
1/2 cup part skim ricotta chz
6 oz pasta
2 cloves garlic
1/4 cup grated parmesan cheese
1/3 cup basil pesto
1/2 lb broccoli
1 oz sliced roasted red peppers
2 tbsps marcarpone chz
crushed red pepper flakes

1. Fill a medium pot 3/4 of the way with salta water; cover and heat to boiling on high
2. wash/dry fresh produce
3. cut off bottom 1/2 inch of broccoli stems; roughly chop broccoli
4. peel and roughly chop 2 cloves garlic
5. quarter deseed lemon
6. roughly chop the peppers
7. in a large pan, heat a drizzle of olive oil on med-high until hot. add the ssusage, cook stirring frequently and breaking the meat apart with a spoon (7-9 minutes or until browned and cooked through.
8. leave any browned bits in the pain, transfer ssusage to a bowl.
9. in a large pan, heat olive on medium-high until hot. add the chopped broccoli, chopped garlic, red pepper flakes, and season with salt and peepper. cook for 5-7 minutes until lightly browned and slightly softened
10. add 1/2 cup of water (careful!). Cook, stirring occasionally, 3-4 minutes or until the broccoli is softened and the water has cooked off. turn off heat.
11. cook the pasta for 10-12 minutes until al dente. *reserve 1/4 cup of the pasta cooking water*
12. in a bowl, combine the ricotta, half the parmesan, the juice of 2 wedges. season with salt/pepper.
13. add the pasta to the broccoli pan and add half the cooking water. cook on med-high for 1-2 minutes or until combined (add more water if needed)
14. turn off heat, stir in pesto, peppers...make sure pasta is coated. serve with remaining parmesan and add more lemon if you wish.
